Simply tossed left over mushroom, onion, radish, green pepper, celery,
cilantro, cheese, and pita bread all together and tossed it with half
of a lime. Flavor was amazing!! I think it would be well paired with
a glass of merlot.....now i wish i had my glass with it!

My baking day!!
I baked my butt off!! I made pita pockets but i used it as personal
pizza. Once the pockets came out of the oven and puffed down. we
topped it with the home made sauce. made it with an awesome array of
toppings!!

Pita Bread (pockets)

Ingredients:
1 1/8 cups warm water (110 degrees F/45 degrees C)
3 cups all-purpose flour
1 teaspoon salt
1 tablespoon vegetable oil
1 1/2 teaspoons white sugar
1 1/2 teaspoons active dry yeast
Directions:
Place all ingredients in bread pan of your bread machine, select Dough
setting and start. When dough has risen long enough, machine will
beep.
Turn dough onto a lightly floured surface. Gently roll and stretch
dough into a 12 inch rope. With a sharp knife, divide dough into 8
pieces. Roll each into a smooth ball. With a rolling pin, roll each
ball into a 6 to 7 inch circle. Set aside on a lightly floured
countertop. cover with a towel. Let pitas rise about 30 minutes until
slightly puffy.
Preheat oven to 500 degrees F (260 degrees C). Place 2 or 3 pitas on a
wire cake rack. Place cake rack directly on oven rack. Bake pitas 4 to
5 minutes until puffed and tops begin to brown. Remove from oven and
immediately place pitas in a sealed brown paper bag or cover them with
a damp kitchen towel until soft. Once pitas a softened, either cut in
half or split top edge for half or whole pitas. They can be stored in
a plastic bag in the refrigerator for several days or in the freezer
for 1 or 2 months.

FOOOOOOD!!!
Today I cooked several meals to freeze for lunches. Lean Burger Patties, Soup, Chicken, And Chicken Spinach Bake. I got to play with Phylo dough which is way way fun!
Todays main focus is on this Cheesey Spinach Bake. Which was a HARD recipe to follow the ingredients were whack. So I didn't get to all of the stuff to make it properly. So I started to do what I want. AND I LOVE how it turned out!
Ingredients: (give or take)
2 small containers of Feta
1 Large container or ricotta
Some Ground nutmeg
1 Egg
1 Bag or Spinach (chopped)
1 Bunch of Spring Onions (chopped)
Handful of Parmesan Cheese
Small handful of Mozzarella Cheese

Bacon Cheese Soup
Dinner is served.
I am trying to be frugal and make more of my lunches and dinners. So I picked up a couple of soups added the recommended milk and chopped bacon and added it grease included.
It Made several lunches and was quick and easy!

Tilapia over red cabbage
Tilapia:
Buy a clean filet. In a med-high heat.
Drizzle oil I prefer olive oil since it's all healthy and what not
Spinkle approximately 1 tablespoon old bay fish seasoning or what ever

Cook about 2 min each side until white goes through.
Serve on top of red cabbage
Spinich:
drizzle pan with oil
Handful of spinach cook until you like it.
Heat in skillet 1/4 c ricotta cheese with 2 T of cranberries, keep
mixing until cheese is soft..

Chipotle dressing:
1 jar of sour cream
1 chipotle chili (from a can)
1 spoonful of sauce of chipotle
1 squeeze of lime juice.
Mix all above ingredients. Should be a thick add milk and extra lime until at desired. Taste and thickness.
Salad: Top with feta cheese
Spinach
Chopped onion
Chopped green pepper
Red cabbage
Chopped cilantro
Chopped tomatoes
Lay a bed of spinach top with what ever you feel like, drizzle with dressing.
I sautéd the onions and green peppers with cabbage....I wish I would have cooked a little longer until the onion was softer.
Crisp a tortilla clice and serve!

In 1 quart water 1 cup sugar with 4-8 cinnamon sticks and 10-12 whole cloves boil until sugar dissolves (20 min) remove sticks
1 quart water with 6-8 tea bags (20 min)
Mix above 2 with 1 can lemonade concentrate with water as needed by can (I only do 4 never the 1/4 or 1/2 can extra) with orange juice concentrate with water (BUT ONLY ADD HALF OF THIS) with 1 can tall of pineapple juice.

So day 2 I am doing better than yesterday. So far I have had 60 oz of water, and 20 oz of tea. Ate my 2 shakes, and. Greens. (Salad at carls jr, my dressing. Threw out the chicken and ate just the greens!) For dinner I went to applebees with my friend ryan. I had steak and broccoli. No sauce ok so it wasn't lean, but at applebees I think it was the best choice!

bad cheating. I had an extra 3 oz of turkey to curb my hunger. And
pretty sure i will be having rice with dinner tonight. But a super
small amt. I need to ween my self off of sugars and starch. I spent
alot of money on this and i am determained to do well..... But no
dairy no carbs is going to be hard....i will need to make smart
choices. Day one i will not deam as a fail but also not a sucess.
Tomarrow is a new start.....lets do this!

Ideal Protein
Starts tomorrow I need to consume 57 grams of protein daily. I need to take daily supplements since I am not allowed dairy or fruits. So once a day potassium calcium. Two times a day multi-vita. Four times a day cal-mag. 3 meals and one snack daily. Goal is 135 pounds. And goal is to 3to 5 pounds a week! I'm ready to do this!

Inspired by my love....Allie.
After a super long 77 plus hour work week I bust open the remainder of my bottle of 2 buck chuck. (litterally a 2 dollar bottle of wine!) I really cant have a glass a wine (just one btw) with out eating. I had some steaks i compelty forgot about and attempted to cook. After smelling I decided that it was still good! YAY! I throw my choice of seasons of my choice all over the steak grill it on my stove top grill. pull it off the oven and slice off a bite..... Couple of chews i spit it out!! SPOILED!!! So now what I already have corn in a pan so now there goes heading out for food. So i didn't feel like reheating up more meat....

One thing that I will truly truly miss in CA will be my Miss Kellie!! She's been a super friend and awesome nail lady! Well when ever her and her greaser boyfriend Kelley (they spell it differently! I call him boyfriend to help with the confusion) throw a get together at his house she makes these nachos.
Boyfriend grills carna asada steaks, she chops em up. Then on a flat pan cookie sheet (foiled lined) she opens a bag of chips. Heats up refried beans and drops them all over the chips! Then she does the same with queso in a can. Then she add veggies she's already chopped up!! Onions, tomatoes, olives, and fresh jalapenos! Of course I help by letter her know where the holes were. I'm not sure which layer she puts the shredded cheese? But it goes on there....
Well I was hungry and this sounds AWESOME!! So I make mine and use ground beef, and kidney beans vs, refried and steak...still good and of course I added alvacdo!!!

Day 2
So I'm doing well! Wake up eat a meal bar then several hours later a meal shake, again a banana after a while then sets my seafood craving!! So I walk over to the sushi restaurant that is 2 min away. Look and order smart! Well in my eye I ordered smart! Miso soup (googled it and it said 85 cals so I will believe it!) And rainbow roll. And a miller light. I was at 1100 ish cals for the day I was again proud of myself, until. My bestie has a bad day and needed a drinking buddy, so I obliged! 4 beers more later (bud light) and a capt morgan shot I was drunk! **side note still at 1600 ish cal for the day** so slightly off tract! But woke up with a diesire for biscuits and gravy! Let's see if I can hold off!! And fight it!

Slim Fast day 1

Great another girl doing another diet! woo freakn hoo right? For me Hell yes!! I am not a huge dieter. I like food. I eat what I wanna eat and will cook what ever I wanna cook! now that I have gone on past the 200 pound mark (210-215) I knew I had to do something right? well that was 2 years ago, ill start something for maybe a week and thats about it. SO i made my self a deal, one month see how it goes. I didn't give my self a treat if i stuck to it. I just want to see how and what I can do in one month. Heres my fat ass back story: I was depressed so what do I do? well change something quite dramatically! So I had a friend in California, Bakersfield to be exact who coaxed me into moving here. So I sold absolutely sold almost everything I own and packed my PT Bruiser and peaced out for California. While here I got I stayed the same still depressed. Something happened, I am still completely uncertain of the how and what happened. But one day I was no longer depressed, I started working more. I have no time to cook for myself! So Hello Jack and the box and McDonalds. Still not sure again with the who what and how this happened! but I went from needed 3 burgers (double cheeseburgers) to hardly getting through one! ONE!! WHODaTHUNK!! I sure didn't! Well I am now down 20 pounds, by not trying. I noticed 20 pounds looks so much better on me. Now I wanna see what will happen when I try!

So day one here is what I did. 10-15 almonds, Mango Sherbet, and a small banana, 2 shakes strawberry and cream, and cappuccino delight! For my Balanced Meal? Hello Cheese burger!!!! I swear it was on their website!! So I take 1# ground beef add seasonings divide into 4 flatten and cook on skillet or grill. Fix on Whole Wheat Buns. Top with American Cheese melted of course! Side dish is 16 oz. of coleslaw sauce would be 1/2 c low fat mayo and lemon juice. Again divide into 4. Total of 450 cal, ended up yummie!!

- 2 (18 ounce) boxes white cake mix (Betty Crocker or Pillsbury)
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 1 1/2 teaspoons salt
- 2 2/3 cups water
- 1/4 cup vegetable oil
- 2 teaspoons real vanilla
- 2 teaspoons almond extract
- 2 cups sour cream
- 8 large egg whites
Directions

Place all dry ingredients in a large mixing bowl and stir together with a wire whisk.2
Add the remaining ingredients and beat on medium speed for 2 minutes.3
Pour into greased and floured cake pans, filling each pan a little over half full.4
Lightly tap cake pans on counter to bring air bubbles to top.5
Bake in preheated 325° F oven until cake tests done.6
Baking time varies according to the size and depth of pans being used.7
I used Wilton's Bake Even Strips on my cake pans to ensure a level-topped cake which required absolutely no trimming-- I highly recommend these, or good quality professional baking pans.8
In 2" deep pans, this recipe makes:9

For chocolate cake: use chocolate mixes and substitute 6 whole eggs for the egg whites.20
For liqueur flavors: substitute alcohol (such as champagne or Kahlua) for about 1 cup of the water in the recipe.21
For berry flavors: use frozen berries, thaw reserving the juice. Substitute the berry juice for part of the water in the recipe, and stir the berries in at the end.22
For lemon cake: substitute lemon juice for about 1 cup of the water in the recipe, use 6 whole eggs instead of the whites, stir in 1 Tblsp lemon zest, and use 1 tsp of a good lemon extract in place of the almond.23
For white chocolate: melt 8oz white baking chocolate & cool slightly. use 6 whole eggs in the recipe instead of the whites, temper the chocolate by stirring in a small amount of the batter, then add the white chocolate to the entire batter and stir well. Doesn't bake up quite as high as the original, so add a pinch more batter to the pans.

- 16 ounces white mini marshmallows (use a good quality brand)
- 2-5 tablespoons water
- 2 lbs icing sugar (please use C&H Cane Powdered Sugar for the best results)
- 1/2 cup Crisco shortening (you will be digging into it so place in a very easily accessed bowl)

Melt marshmallows and 2 tablespoons of water in a microwave or double boiler: Put the bowl in the microwave for 30 seconds, open microwave and stir, back in microwave for 30 seconds more, open microwave and stir again, and continue doing this until melted.2
It usually takes about 2 ½ minutes total. Place 3/4 of the powdered sugar on the top of the melted marshmallow mix.3
Now grease your hands GENEROUSLY - palms, backs and in between fingers, then heavily grease the counter you will be using and dump the bowl of marshmallow/sugar mixture in the middle.4
Start kneading like you would bread dough. You will immediately see why you have greased your hands.5
Keep kneading, this stuff is sticky at this stage! Add the rest of the powdered sugar and knead some more.6
Re-grease your hands and counter when the fondant is sticking. If the mix is tearing easily, it is to dry, so add water (about ½ tablespoon at a time then knead it in). It usually takes me about 8 minutes to get a firm smooth elastic ball so that it will stretch without tearing when you apply it to the cake.7
Its best if you can let it sit, double wrapped, overnight (but you can use it right away if there are no tiny bits of dry powdered sugar). If you do see them, you will need to knead and maybe add a few more drops of water.8
Prepare the fondant for storing by coating it with a good layer of Crisco shortening, wrap in a plastic- type wrap product and then put it in a re-sealable or Ziploc bag. Squeeze out as much air as possible.9
MM Fondant will hold very well in the refrigerator for weeks. If I know that I have a cake to decorate, I usually make 2 batches on a free night during the week so it is ready when I need it. Take advantage of the fact that this fondant can be prepared well in advance.
